Time to get back on track with my Heath and Juicing

Wow I realized how long it has been since I logged on and wrote on here. This past year has been filled with lots of wonderful new things. My family was blessed with a new son in law and a new grand daughter as well. I had a few heath scares with seizures and falls but over all I kept up with my juicing and changed to new Neurologist in January who teamed up with my Internist and Rheumatologist to work on a mix of natural as well as medicines to help with my many medical issues. When I started this year I am sad to say I weighed in the highest I have ever weighed and the saddest as well.(In spite of eating and juicing correctly). Can you sad depressed and frustrated, My Jan 2015 weight was 303. No i don't like taking pictures but here I am with my baby Darla Rae.
Today I weighed in and after my new meds, doing some light walking (in spite of a hitting  my head last Sunday) and of course continuing my juicing and eating mainly fruits and veggies my weight today is 270.3
This is me last week. 

So I am recommitting to blogging and posting recipes. Hope to hear from you all too

New Yummy Juice

Goodness I need to get back to posting in here. This year has been full of  family moving, new babies on their way and simply trying to keep moving forward and not backwards.

My sister has recently started to add juice to her diet and she asked me for some recipes that don't included watermelon, cucumbers and tomatoes.

So here is the first one I designed for her. You can make it as a juice or add some frozen fruit in the end to make a smoothie.


8 carrots
2 cups strawberries
3 oranges
1 cup raspberries
1 cup black grapes
1 zucchini squash (yep)
6 key limes or 1 large lime
Juice all above. If you want a juice smoothie you can freeze some into cubes and blend in a blender or you can add some of the juice to a blender and add frozen strawberries and raspberries.

How much does it make? 
well it filled up my husbands\'s big beer stein.

Super Healthy Sunday

Super Bowl Sunday is right around the corner and since I am eating healthy and juicing again what better time than to share some of my favorite juice recipes for the big game. While the others are getting their unhealthy munch on with queso and chips why don't you drink a nice big healthy and great tasting glass of
Chips and Salsa. Makes 40 oz of Juice


6 Ears of Corn (cut the kernels off)
3 Bell Peppers
6 Tomatoes (can use Roma... I used Beef Steak)
3 jalapeno peppers (start with a little and add to your taste)
4 green onion stalks (I add the bulbs as well)
1 clove of garlic
3 limes (peeled)
Now what Salsa is without Cilantro? So my twist is 1 handful of cilantro.

Now I know you are thinking HOW in the world are you going to juice kernels of corn? Well, my niece gave me a hint that made it so simple and easy. Turn off your juicer.
Place your corn kernels into the food shoot.
Place the plunger in and THEN turn the juicer on.
You will need to do this each time you empty your food shoot but it works...I promise you! You will get the most amazing Corn Milk!<br />

After you "juice' your corn then follow with the rest of your produce. As my niece warned me, I will warn you... Don't take a single sip of the corn milk or there will be none left for your salsa!

Now for those who want a good GREEN ENERGY Juice to keep your attention going now only thru the game but also those commercials (which come on we really know that is what most of us watch the Super Bowl for anyways...)
For Your Dessert Juice why not try one of my favorites that even non juice drinkers will love and ask for every time they come to visit....

Cranberry Jalapeno Banana Bread for Christmas...Not Your Grandma's Fruit Cake

It's that time of year again when Holiday Baking starts. I am one of those folks who happens to really love fruit cake. BUT no one else here does so I never make any. Year I decided to do my own version of a Fruit Cake that everyone will like.

Cranberry Jalapeno Banana Bread
1/4 cup coconut oil or applesauce
1 cup sugar
1 egg
3 cups gluten free bisquik or all purpose flour
3 tsp baking power
1/2 tsp salt 1/2 tsp cinnamon
4 large smashed bananas
1/4 cup water
1/2 tsp vanilla'
1 tsp orange peel
Juice from the orange you just zested
2 cups of cranberries
1/2 tablespoon lemon peel
1 cup Cranberry Jalapeno Jam
1 cup of nuts chopped your choice if you want to add them.

Cream together the sugar and coconut oil. Add egg and vanilla. Add dry ingredients alternately with the banana, water and orange.lemon peel and the juice from the orange. Add in the 2 cups of cranberry jalapeno jam. Mix in the cranberries by hand.

I use mini loaf pans and it fills up 4 silicone pans. If you are using regular pans grease and flour before adding the mixture. What is left over out into the bottom of a loaf pan. this will make a bar like "cookie". I  did not add nuts to the loaves but sprinkled it on the top of the one baked in the single loaf pan.
Bake at 350 degrees for 60-75 minutes. loves take longer to cook.



Cranberry Jalapeno Jam
1 bag of cranberries
1 orange juiced
2 pears chopped
1 granny smith apple
 1/4 cup of honey
1/2 tsp cinnamon, nutmeg and cloves

Place all together in pan and add water to float the cranberries. Cook until nice and thick. Allow to cool and store in the fridge.

Summer Smoothie Juice

Smoothie and Juice in the same sentence??? Yes I made a TRUE juice up to feel like a smoothie and be oh so satisfying. 
First thing to do is make up the ice cubes in advance and have them in your freezer.

Fruit cubes
juice two bags of cranberries ( can sub any sour fruit like raspberries)
4 oranges
Freeze the juice into ice cubes and store.

Simple and easy to make up this fun cooling juice.
juice the following
4 pears
1 Macintosh Apple
2 Cups Blueberries
2 Cups Spinach
After you juice the above add them to a blender with a good handful or two of your Fruit Cubes. 
Blend until smooth.
You will now have a Smoothie looking, fresh tasting Juice. Enjoy

Great Breakfast Smoothie!

This is one of our favorite go to Smoothies in our home that not only tastes wonderful it also holds you over from hours and hours. Throw everything into the high speed blender and give it a whip. We make the recipe up the night before minus the frozen bananas and leave it in the Ninja container inside the fridge overnight. Pull it out, add the frozen bananas and more almond milk if you need to thin it out some and hit the ON BUTTON. Instant healthy breakfast on the go!
